I deflected a record on item-level for ILL, but my library still appears on the list of suppliers

This is correct. You are still visible as a possible supplier, but once the request has been sent, you will automatically be deflected by the system (No - Auto-Deflection: local holdings.). You will not see the request in your Can you supply list.
